Pumpkin and Barley Soup

Mom used to tell me that pumpkin is very good, it will help when having constipation problem, we used to have them steamed just like the way we eat steamed sweet potato.
But…….Oh my oh my, i just learn today from the web that pumpkin is also serve to dog/cats when constipated. ha ha ha.
if you didn’t know about that fact, you do now. hope knowing doesnt turn you off trying out this soup
Serves 3 person
Ingredients
- 750g pumpkin – cubed
- 1 large onion – dice
- 1/2 cup barley
- 35g butter
- 2 cup chicken stock
- 1 cup water
- 1 cup milk
- 1/4 tsp cumin seed
- salt and pepper
Preparation
First wash barley and add 2 cup of water and microwave it for 10 min
Second in a soup pot, melt butter and brown diced onion, add then add pumpkin. stir for 5 min then add chicken stock and water. strain barley and add them to pumpkin. turn on low heat and simmer for 30 min. when the pumpkin has soften, turn off heat and let it cool down
Last you can use either food processor or potato masher, depending whether you like smooth or chunkier consistency. Add hot milk onto the soup then bring to a boil. garnish with parsley.

I made this for my son today except I didn’t put barley….it’s yummmm my son eat with bread dip in pumpkin soup slurpppp
