Seaweed, Baby anchovies and Egg drop soup

A while back my hubby came home with a whole pack of instant seaweed egg drop soup, so here I am trying to recreate this at home.

I start soaking half a pack of chinese seaweed(they are different to japanese seaweed) then in a soup pot, i pour in a can of chicken soup, plus another cup of water, then i add in a handful of baby anchovies and soften seaweed. Bring it to a boil, in a bowl crack an egg or two and whisk it. When the soup come to a boil add teaspoon salt, bit of pepper, dash of light soya sauce, at the end swirl in the beaten egg and turn off the gas.

Before serving drizzle sesame oil

Snow Fungus Coconut Chicken Soup

This is our recent favourites, we were at Boxhill Safeway and saw 99c for an old coconut (what a bargain!)

There are three stage to prepare the soup,  boil water with chicken and ginger first for about 45 minutes and then add coconut meat and jujube in and cook for another 45 minutes, the last 20 minutes add in snow fungus and coconut juice (not MILK!!), add salt to taste. yummm.. Enjoy.

  • Chicken
  • Dried Snow Fungus (soak in cold water first)
  • Coconut Meat
  • Coconut Juice
  • Jujube (Red dates)
  • Ginger

Creamy Potato & Leek Soup

If I need to have soup ready in half-an-hour, creamy potato & leek is the soup to go. sometimes if i want my soup to be pale white, i will omit the green part of leek and make sure i did not burn my leek while softening it. also i replace black pepper with white pepper.

Sugarcane Carrot Pork Soup

During winter time, my skin get very dry and irritated. I heard that having sugarcane is good because it help to moisturise skin also it is good to have when you had cough. If you can find fresh sugarcane at your local store it is preferable than the can sugarcane, a bit of more work though, you have to cut off the outer skin.
